Liver kebab can be prepared differently from region to region. Adana style liver kebab The liver is chopped larger and rubbed with onion and spices before being skewered. In Diyarbakır style liver kebab, the livers are finely chopped and placed on skewers. shallots are added.

Ingredients :

1 kilogram of lamb liver
200 grams of tail fat
1 teaspoon chilli flakes
1 teaspoon cumin
1 teaspoon salt
2 tablespoons of vegetable oil
For the onion salad:
¼ bunch parsley
1 large onion
Half lemon juice
Two spoons of oil
Salt
Pepper

Preparation :

1. Wash the liver thoroughly and drain off excess blood. Cut into small cubes
2. Mix chilli flakes, cumin, salt and vegetable oil in a bowl
3. Add the liver to the spice mixture and mix well. Coat the liver all over with the spices. should be covered.
4. Refrigerate the liver for at least 30 minutes.
5. While the liver is in the fridge, prepare the barbecue and make the salad
6. For the salad, finely chop the onion, finely chop the parsley, salt, pepper and mix well with lemon juice and your salad for liver is ready
7. Thread the livers on skewers. If you are going to use tail fat, add the tail fat between the livers. you can also add small pieces.
8. Cook the liver skewers on the barbecue or grill. Cook the liver evenly on both sides. take care to cook.
9. And serve your cooked liver with ready salad

Tips and Tricks:

– You can soak the liver in milk or yoghurt before cooking to make it soft.
– Drain the excess water before skewering the liver, otherwise the liver will not be tender in the barbecue. It may release its water and cause it to flare up.
– Do not turn the liver too much while cooking, cook it once on each side. is enough.
– If you cook the liver on embers, it will be more flavourful.
– You can serve liver kebab with onion, salad and ayran.
