Ingredients:

For the Main Mixture:

2 cups of fine bulgur wheat

1.5 cups of hot water

3 tablespoons of tomato paste

1 tablespoon of red pepper paste (optional, for a little heat)

½ cup of olive oil (or vegetable oil)

1 teaspoon of red pepper flakes

½ teaspoon of cumin

Salt and black pepper (to taste)

For the Greens and Final Touches:

1 red onion (very finely chopped)

1 clove of garlic (crushed, optional)

1 bunch of scallions (finely chopped)

1 bunch of parsley (very finely chopped)

½ bunch of fresh mint (very finely chopped)

1 ripe tomato (diced into small cubes, optional)

1 cucumber (diced into small cubes, optional)

Juice of 1 fresh lemon

1 tablespoon of pomegranate molasses

Instructions:

  1. Soak and Knead the Bulgur: Place the bulgur in a large mixing bowl. Pour the hot water over it, cover the bowl, and let the bulgur swell for 10-15 minutes. Once plump, add the tomato and pepper pastes, salt, black pepper, cumin, and red pepper flakes. Begin kneading the mixture with your hands. This is a crucial step! Continue kneading until the bulgur and paste are fully combined and the mixture has a uniform, deep red color.
