2 cans (approx. 800 ml) coconut milk
1 can (approx. 400 ml) coconut cream
1 cup coconut water
1/2 to 1 cup granulated sugar (adjust to your taste)
Instructions:
- Combine: Mix all ingredients (coconut milk, cream, water, and sugar) in a medium saucepan.
- Dissolve: Stir continuously over medium heat until the sugar is completely dissolved. There’s no need to boil the mixture; just make sure the sugar has fully dissolved.
- Chill: Remove the pan from the heat and let the mixture cool to room temperature. For best results, chill it in the refrigerator for at least 2-3 hours, or even overnight.
- Freeze: Pour the chilled mixture into an ice cream maker and freeze according to the manufacturer’s instructions. If you don’t have an ice cream maker, pour the mixture into a freezer-safe container. After the first 2 hours, take it out and mix thoroughly with a fork.
- Achieve Creaminess: To prevent ice crystals from forming, repeat the mixing process every 30 minutes until the sorbet reaches a smooth, creamy consistency. This will likely take 3-4 repetitions.
- Serve: For a beautiful presentation, serve the sorbet in halved coconut shells or elegant bowls, just like in the picture. Garnish with a fresh mint leaf for a finishing touch.
