Falafel:

Falafel is made by grinding legumes such as chickpeas, beans or broad beans and mixing them with spices. It is a speciality of Middle Eastern and Mediterranean cuisine prepared by frying. Usually bread served between meals or in salads.

Although the origin of falafel is not clearly known, it is known from different countries such as Egypt, Lebanon and India. countries are thought to have historical ties. Widespread in the 7th century in the Middle East is known to be consumed.

Ingredients:

For falafel :

2 cups chickpeas (soaked in water for 1 night)
Half a bunch of parsley
1 dry onion
2 teaspoons salt
1 teaspoon chilli flakes
1 teaspoon of red chilli powder
1 teaspoon cumin
Half a teaspoon of black pepper
Half a teaspoon of garlic powder or 2 cloves of garlic
2 tablespoons flour
Tahini Sauce :
3-4 tablespoons of strained yoghurt
Half lemon juice
2 cloves of garlic
1,5 tablespoon tahini
Quarter teaspoon salt

Preparation;

1. The chickpeas used for falafel should not be cooked chickpeas, only chickpeas should be cooked the night before. should be soaked and reach about twice the size
2. Put the chickpeas into your blender and then add the onion, parsley and garlic get it
3. Add the spices and flour to the ingredients and mix the falafel mixture to a smooth consistency. pull until you get it.
4. Leave the falafel mixture in the fridge for 2 hours for easy shaping
5. While the falafel is resting, you can prepare the tahini sauce. For the sauce, put the strained yoghurt, lemon take the broth, crushed garlic, tahini and salt
6. Mix all these ingredients until you get a homogenous consistency
7. Rest your tahini sauce in the fridge, you can use this sauce whenever you want for a week will not spoil until it is ready.
8. Shape the rested falafel mixture into round shapes and you can optionally sprinkle it with sesame seeds. the outer part
9. Cook the shaped falafels in a deep oil until well browned
10. And your falafels are ready to eat

• Fry the falafel in deep oil, make sure that the oil is hot
