Ingredients:

1,5 kg beef ribs
Half a kilo of lamb ribs
2 tablespoons salt

Preparation:

Firstly, we pass the meat through the meat grinder 2 times.
We take 2 kilos of minced meat on a tray.
Add 100 grams of sausage seasoning and 2 tablespoons of salt. Knead the mixture for 5 minutes.
Cover the meat with cling film and refrigerate for 1 day.
At the end of 1 day, we take out the meat. Now it’s time to soften and clean the intestines.
We add 2 cups of water and 3-4 tablespoons of vinegar to a bowl. Add the intestine on it and cook for 10 minutes
to soak.
After 10 minutes, we pass the intestines through fresh water and drain the water.
On the other hand, cut the end of a bottle. Now we tie one end of the intestine. The other end
and then we put it in a bottle and we roll it up.
Now we take our meat and fill it into the intestine from the end of the bottle.
From time to time, we make compression and make small holes in the intestine with a toothpick.
After filling the intestine with meat, we tie the ends and tie them with the last rope.
We hang the sausage in a suitable place.
In the summer heat, we keep it outside for 3 days in the fridge for at least 1 day and consume it with pleasure.

Tips and Tricks:

Using a mixture of beef and fatty beef for sausage allows you to get a more flavourful sausage.
You can adjust the amount of spices according to your taste.
When drying the sausages, you can cover them with newspaper. This allows the sausages to dry faster.
You can store homemade sausages in the refrigerator for about 2-3 months.
