Hunkar Begendi The Story of Flavour Written in History:

meyanedir. Made with milk, butter and flour, this appetiser adds flavour to the dish.
Hünkar beğendi, which appeals to both eyes and stomach, is the star of special occasions and tables.
We can say that those who have not tried this dish with its flavour, history and presentation are missing a lot.
Ingredients:
For Begendi;
2 tablespoons of butter
2 tablespoons flour
4 roasted aubergines
Half a glass of Kashar cheese
Salt
Muscat
1 tea glass of milk
For the top;
2 tablespoons of butter
1 onion
500g cubed lamb
1 clove of garlic
1 chilli
1 tomato
1 teaspoon of tomato paste
Salt
Black Pepper
1,5 cups of hot water
Preparation:
1. Firstly, let’s take the butter in our pan and melt it.
2. Then add our chopped onions and roast them for a while.
After the onions are roasted, add our meat and cook until the water is absorbed.
3. After our meat has absorbed the water, add the chopped peppers, tomatoes, tomato paste, salt and black pepper.

4. Let’s add our hot water and let it cook for about 30 minutes more.
In the meantime, let’s prepare our likendi. Let’s take our butter into the pan and melt it.
5. After the butter melts, add our flour and roast it without burning until it smells.
Let’s add our chopped aubergines on our roasted flour and add the aubergines.
(If you want to make the aubergines at home, bake the aubergines in the oven at 200 degrees
It is enough to cook for 35 minutes, then you can peel the aubergines and use them)
6. Then add grated kashar cheese, salt and muscat and add our cheeses
Let’s continue stirring our liking until it melts.
7. Finally, add the milk and stir the mixture until it absorbs the milk and gathers.
