A fantastic option for vegans, this traditional dish is a summer staple in the Karadeniz Region of Turkey. Now, you can bring the authentic taste of the Karadeniz right to your kitchen with this delicious recipe!
Ingredients for Fasulye Diblesi:
1 kg fresh green beans
1 large onion
2 large tomatoes
1/2 cup rice (Baldo or Jasmine rice works well)
1/4 cup hot water
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes
1 teaspoon salt
3 tablespoons liquid oil (or olive oil)
How to Make Fasulye Diblesi (Step-by-Step Guide):
- Prep the Vegetables: Trim the ends of the fresh green beans and chop them into very small pieces. Finely chop the onion and dice the tomatoes. Rinse the rice and set it aside to drain.
- Sauté the Onion: Heat the oil in a wide pot or Dutch oven. Add the chopped onions and sauté for about 3-4 minutes until they become translucent.
- Add the Beans: Add the chopped green beans to the pot. Continue to sauté for about 5 minutes until the beans soften slightly.
- Add Tomatoes and Spices: Add the diced tomatoes and all the spices (salt, black pepper, red pepper flakes). Stir and cook until the tomatoes release their juices and begin to soften.
- Combine and Simmer: Add the drained rice and the hot water to the pot. Stir all the ingredients gently, then cover the pot with a lid. Reduce the heat to the lowest setting.
- Cook to Perfection: Let the dish simmer for about 20 minutes. If the beans are still too firm, you can add a little more hot water. The dish is ready when the beans are tender and the rice has absorbed all the liquid.
- Rest and Serve: Once cooked, turn off the heat and let the diblesi rest for 10-15 minutes with the lid on. Serve it warm or at room temperature, accompanied by yogurt or a fresh salad.
Enjoy your meal!
