Lentil soup is an indispensable part of Turkish cuisine, and it can be made with very few ingredients to achieve a wonderfully silky consistency. This recipe is perfect for those who are looking for a classic, simple flavor. Here is a foolproof recipe for a perfectly smooth lentil soup.

Ingredients:

1 cup red lentils

6 cups water

1 tablespoon butter

1 teaspoon red pepper flakes

Salt to taste

Instructions:

 

  1. Prepare: Thoroughly wash the red lentils until the water runs clear. This step is important to ensure your soup is both clean and has a brighter color.
  2. Cook the Lentils: Place the washed lentils in a pot. Add 6 cups of water and bring it to a boil. Reduce the heat to medium and cook until the lentils are completely soft and begin to fall apart.
  3. Achieve a Smooth Consistency: Once the lentils are cooked, turn off the heat and add salt. Use an immersion blender to blend the soup until it is completely smooth. (If you don’t have an immersion blender, you can use a regular blender or pass it through a sieve, though the latter can be a tedious process.)
  4. Simmer: Return the blended soup to the stove and simmer over low heat for another 5-10 minutes. If the consistency is too thick, you can add a little more hot water, adding it slowly, a quarter cup at a time, until you reach your desired consistency.
  5. Serve: Once the soup has simmered, turn off the heat. In a small pan, melt the butter, add the red pepper flakes, and lightly fry them. Drizzle this spiced butter over the soup as you serve it hot.
