Turkish White Bean Stew (Kuru Fasulye) – Recipe

This hearty and flavorful dish is a staple of Turkish cuisine, perfect for a cozy meal. For an authentic experience, serve it with rice pilaf and a glass of ayran (a salty yogurt drink).

Ingredients

2 cups dried white beans

1 large onion, finely chopped

2 tablespoons tomato paste

1 tablespoon flour (optional, for a thicker consistency)

Hot water or meat/chicken broth

Salt, black pepper, and paprika to taste

Olive oil or butter for sautéing

Optional additions:

Meat (chicken, beef, or bone-in beef) for a richer flavor.

Instructions:

  1. Prepare the Beans: Soak the dried white beans in a large bowl of cold water overnight. The next day, drain and rinse them. Place the beans in a pot, cover with fresh water, and bring to a boil.
  2. Parboil the Beans: Boil the beans for about 20-30 minutes, or until they are cooked but still firm. Skim off any foam that forms on the surface of the water. This step helps with digestion. Be careful not to overcook them; they should not fall apart.
  3. Sauté the Onion and Meat (if using): If you’re using meat, first brown it in a pot until cooked. Then, add the chopped onion and sauté until translucent. If not using meat, simply sauté the onion in olive oil or butter until soft.
  4. Add the Flavor Base: Add the tomato paste to the sautéed onions and cook for a minute to toast the paste and enhance its flavor. For a thicker stew, stir in the flour and cook for another minute.
  5. Combine and Simmer: Drain the pre-cooked beans and add them to the pot with the onion and tomato paste mixture. Pour in enough hot water or broth to cover the beans. Add your seasonings (salt, pepper, paprika).
  6. Simmer to Perfection: Bring the stew to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 30-40 minutes, or until the beans are tender and the flavors have melded together. Stir occasionally to prevent sticking.
